 Indian Cooking Tips: How To Make Vellayappam- A Sweet Appam From The Streets Of Kerala

When we speak of Indian street food, the first thing that comes to our mind is chaat, paapdi, rolls or momos! But that is all about the north Indian street food, have you ever wondered about the street food down south? Beyond the dosas, idlis and vadas, south Indian cuisine boasts of stellar street foods that aren't much popular but are sure to impress your taste buds. From puttu and kothu parotta to pazhampuri and atho, the list is endless with each street food brimming with distinct flavours.


Appams, for instance, are one of the staple in south Indian cuisine, and one can find a lot of it in on the streets of Kerala. Paper soft, thin and crispy, it is made with rice flour and popularly paired with chicken stews, ghee roast and avial. Quick and easy to make, appams are made in many different variations with multiple ingredients. From bright beetroot appam to egg one, you can choose from a whole lot! But did you know you can even relish a sweet appam made with just a handful of ingredients? You read that right.


Vellayappam, also known as vellappam, palappam or kallappam in Kerala, is a super thin, soft and sweet appam made with white rice, coconut and yeast as primary ingredients. One can use jaggery or sugar to sweeten them. You can pair it with stews, avial or any dry accompaniment or simply have as is!


Here is how you can make Vellayappam at home:


Ingredients:


- Rice- 1 cup


- Cooked rice- 1/2 cup


- Coconut (grated)- 1 cup


- Yeast- 1 tsp + 1 tsp baking soda


- Sugar- 1 tbsp


- Salt- 1/2 tsp



Method:


1.1. Wash and soak rice for 4-5 hours.


2.2. Grind the soaked rice with little water to make a smooth batter.


3. Add the grated coconut to this batter and grind again till it is smooth.


4. Now add the cooked rice to it and blend more until smooth liquid consistency. Add more water if needed.


5. Now transfer the batter into a bowl to ferment. Take a deep bowl as it will rise.


6. Make the yeast mix by adding yeast and baking powder to warm water. Gently mix for about 5 minutes. Let it rest closed for about 10 minutes.


7. Add this yeast mixture along with salt to the batter. Mix it well.


8. Let it ferment for about 10 hours or overnight. The batter will rise when well fermented.


9. Now to make Vellayappam, heat a flat-surfaced pan, grease it with oil and pour a ladleful of fermented batter on the pan.


10. Swirl the pan to let the batter spread for crispy edges.


11. Let the vellayappam cook, covered for a few minutes. Serve hot.

Ingredients of Masala Dosa


2 Cups rice (preferably parboiled)


1/2 cup black Gram (Dhuli Urad)(split and husked)


1/2 tsp fenugreek seeds


2 tsp salt


Oil (for cooking dosas)


For the Masala for Dosas:


500 gms potatoes (peeled and cubed), boiled


1 1/2 cups onions, sliced


2 green chillies (optional), finely chopped


2 tbsp oil


1 tsp mustard seeds


6-7 Curry leaves


2 tsp salt


1/4 tsp turmeric, powdered


1/2 cup water


How to Make Masala Dosa


1.Wash and soak the rice in one container and the dal and fenugreek seeds together in another container for 5-6 hours or over night, depending on the weather.


2.Grind dal mixture together to a very smooth consistency. Next grind the rice smooth too and mix the two batters.


3.Add salt and enough water to make into a dropping consistency. Leave to ferment over-night or more depending on the weather, till a little spongy.


4.If thickened too much, add a little water to thin a bit. Heat tawa, and brush oil over it. When really hot, splash a little water over it, and immediately pour batter onto it, spreading it thin, with a circular motion.


5.This will have to be very swift and will need a bit of practice.

About Vegetable Sandwich: A wholesome sandwich, with the goodness of broccoli, zucchini and eggplant topped with a plum cheese mixture and sliced between burger buns or bread slices.


Ingredients of Vegetable Sandwich


For the Sandwich:


1/2 red, green and yellow bell peppers


1 onion


40 gm leak


1 small egg plant


50 gm yellow squash


50 gm zucchini


50 gm broccoli, cut into florets


Handful of lettuce leaves


Salt and pepper to season


2-3 Tbsp olive oil


3-4 slices of Brie


For the Marinade:


1 Tbsp balsamic vinegar


2 Tbsp olive oil


Salt and pepper to season


1 tsp chilli flakes


2 basil leaves


1 sage leaf


1 small bunch rosemary, chopped


For the Spread:


3 Tbsp cream cheese


2 Tbsp plum chutney


Salt and pepper to taste


Few drops of tobasco


How to Make Vegetable Sandwich


1.Trim the broccoli into florets.


2.Grill the bell peppers, squash, zucchini and eggplant on both sides. Baste with olive oil and herbs.


3.Marinate the grilled vegetables with the mixture for about 10 minutes.


4.Grill two slices of bread.


5.Make a spread by mixing together cream cheese, plum chutney, a few drops of tobasco and season with salt and pepper.


6.Spread this plum cheese mixture on the slices of bread.


7.Layer a few leaves of lettuce and add the vegetable mix.


8.Add a 2-3 slices of Brie cheese. Serve with chips.
